Cacao Raw Slice

Want to make your own slices so you can have them for morning or afternoon tea?

What you didn’t know was that it actually only takes about 10 minutes to assemble your slice and then you can enjoy it after it has set a few hours later. It’s so simple.

Base Ingredients:

220g cashews

25g coconut oil

25g protein powder

2 Tbsp water

Top:

80g Turkish apricots

80g gogi berries

60g dates

1 tbsp cacao

1 tsp vanilla

Icing:

2 Tbsp cacao

1 Tbsp maple syrup

1 Tsp vanilla

Method:

In a food processor grind cashews into a powder and then add the protein powder and coconut oil, adding water as needed to make it combine (2-4tbs will be adequate)

Remove and place into a square tin (already sprinkled with a little rice bran oil to avoid sticking)

Push down mixture with fingers to form a nice solid base to your slice.

In the food processor combine all the dried fruits, vanilla and cacao and blend until really well combined. Remove and add to the top layer of the slice pushing down flat with finger tips

For the topping combine maple syrup (you made need to add more to suit your palate), cacao, vanilla, coconut oil (get soft in heat if hard from cooler climates first) and stir until smooth (you can add peppermint oil for a choc mint flavour)

Refrigerate for 4+ hours and slice into 20-30 pieces and keep refrigerated until served or eaten.
