Chickpea, Cucumber and Radish Salad
Ingredients:
150 g Cucumber
115 g Radish
125g Celery
90g Red onion
1 Can chickpeas
1 Garlic clove (9g)
1 Lemon
30g Olive oil
Drain tin of chickpeas, wash and add to a bowl
Dice radish, celery, cucumber and add to bowl
Finally chop garlic, red onion and mint and add to bowl
Stir
Add the juice of 1 lemon, olive oil and salt and pepper to taste.
Serve or cover the bowl and refrigerate until needed
(Add grilled tofu, chicken, fish, beef or lamb if required)
