
13 Nov Christmas Prawn and Mango Salad
This dish is a perfect healthy summer meal for Christmas day adding colour, freshness and summer fruits to your Christmas Day spread.
Ingredients:
1 kilo medium to large prawns
1 large mango diced
1/2 small lime
1 large avocado diced
8-10 halved baby tomatoes
1 large cucumber chopped
8 mint leaves finely chopped
Olive oil
Method:
Peel and clean prawns and chop into thirds and add to a bowl. Then add the other ingredients finishing with the mint, a dash of olive oil, the lime juice and a touch of sea salt to taste. Cover and refrigerate until serving. Serves 5-8, double the ingredients if serving a larger quantity of people from 8-15. Serve as a side. Can be eaten as a dish on its own as well.
