
20 Mar Energy Restoring Hearty Vegeterian Bean Mix
Need some wholesome fibre, protein, a boost of B vitamins, folate, minerals, iron and other nutrients nto your body the vegetarian way?
We got these great beans from The Source Lane Cove
Ingredients and Method:
1/2 cup green French lentils, 1 cup red kidney beans, 1/2 cup black beans. Soak beans over night. Drain water and put into pot with 3 cups of water, 1 tin tomatoes, 3 chopped egg tomatoes or a punnet chopped cherry tomatoes, 1 chopped carrot, 1 chopped onion, 2 chopped garlic cloves, 2 tsp tumeric and 1 tsp cumin. Boil for 3 minutes then reduce to simmer for 2.5 hours adding salt to taste and added water if needed. Serve with soy cheese for vegans or cheeder /parmesean cheese and rocket.
