16 Jun Red Kale and Tomato Omelette Low Carb Breakfast Perfect for Weight Loss

Low carbohydrate breakfasts are really important for weight loss as high carb, sugary foods don’t have the sustained energy that the more nutrient rich meals high in protein have.
2 egg whites
1 whole egg
50g red kale
25g weight watchers cottage cheese
30g cherry tomatoes
Lightly spray a fry pan with rice bran oil and cook chopped kale on moderate heat for 3 minutes. Remove from pan and wash out. Lightly spray again with the rice bran oil and beat the egg mixture into a bowl and add to the fry pan. Chop cherry tomatoes and once the egg mixture is half cooked through place kale, tomato and cottage cheese plus salt and pepper to taste on one half of the mixture that is most cooked. Fold over the side that is cooked to cover the mixture. Leave for a minute. Flip the omelette over to cook through on the other side for another minute and serve.
Vegetarian and Gluten Free and very low carbohydrate great for breakfast and weight loss.
