Rosewater and Cacao Nutty Bites

This snack is so delicious it is a great alternative when fighting the sugar craving, when you need a pick me up before or after yoga or when friends drop in.

Base Ingredients

250g raw cashews                         25g coconut oil                              100g pitted dates

120g dried cranberries                 50g pea protein powder              10g cacao powder

10g vanilla extract                         2-3 tbsp rosewater

Top Ingredients

25g coconut oil                              10g cacao powder                         10g pea protein powder

5g vanilla extract

Method

Lightly spray cake tin with rice bran oil

Blend cashews and make a powder. Melt coconut oil and add to the cashew mixture and blend. Crush cranberries and dates until tiny. Add to processor with the nut mixture add all other base ingredients and blend. Remove and press down firmly with finger tips.

In a bowl add the coconut oil (melt if needed) and add all other ingredients and mix. Use the back of a spoon to smooth over top of mixture                                              refrigerate immediately for 3 hours before serving.
