
04 Jun Vegan Crunchy Chickpea, Cucumber and Radish Salad
A filling salad great perfect for those on a weight loss or healthy detox program. Have on it’s own for a low carbohydrate lunch, dinner or entertaining for vegetarians or add your lean chicken, steak, lamb or pork for a higher protein hit for those who want to add meat
ingredients:
150 g Cucumber
115 g Radish
125g Celery
90g Red onion
1 Can chickpeas
1 Garlic clove (9g)
1 Lemon
30g Olive oil
Drain the tin of chickpeas, wash and add to a bowl. Dice radish, celery, cucumber and add to bowl. Finally chop garlic, red onion and mint and add to bowl. Stir. Add the juice of 1 lemon, olive oil and salt and pepper to taste.
Serve or cover the bowl and refrigerate until needed
