27 Oct Vegan Pasta Sauce with Zucchini
Enjoy this wonderful recipe after yoga or Pilates class or take to work and heat up for lunch. Delicious and easy to prepare.
2 small zucchini chopped
1 1/2 tbsp orange juice
1/3 cup coconut cream
1/2-1 tsp nutmeg
1/2 -1 tsp cumin
1/2 piece crushed garlic (optional)
200g gluten free spirals
salt pepper to taste
Boil water and add pasta. In a pan cook zucchinis in olive oil on medium heat. Set aside.
Steam carrots, when cooked them puree them.
In a pan on medium to low heat, cook garlic if using and add coconut cream, nutmeg, cumin and stir, adding the puree and orange juice, salt and pepper to your liking and cook through until warm. Add pasta, toss through sauce. Serve and add zucchini stirring through gently or just place pieces on top as desired. Add parsley for a garnish and a salad or vegetables on the side.
