11 Oct White Fish with Zucchini Noodles
This low carb dinner is perfect for a quick cooked meal after a busy day at the office, even after you come home from your yoga or Pilates class at Soulful Fitness.
500g ling fish, snapper or flat head fillet
1 Lemon juice
250g shredded zucchini
1 tin 400g organic tomatoes
In a pan heat just over medium and add rice bran and fish. Season with salt and cook 50%. Add chopped shallots and ginger. Blend the tomatoes and capsicum into a liquid and add to the mixture stir occasionally and gently. Add the lemon juice, zucchini and salt and pepper and cook until fish flakes apart with a fork.
Serve with another dash of lemon juice and some fresh herbs or kimchi if available.
Cooking time 15 mins so this one would be perfect for cooking during the week day
