Tumeric Zucchini Soup
2 large zucchini
2 garlic cloves
1 onion
1 tin light coconut milk
1 tbsp fish sauce
2 tsp tumeric poweder
1 tsp mild curry powder
1/2 lime
2 tbsp chopped corriander
1/4 tsp pepper and salt
1 cup vegetable stock
Method:
Chop onion and cook on medium heat in fry pan for a few minutes until softened. Add garlic and chopped zucchini and cook gently Add tumeric, salt, pepper and curry powder and stir for another minute. Add coconut milk, stock and fish sauce. Cook on medium heat for 10 minutes reducing to low heat as needed. Add the juice of half a lime and serve with chopped corriander.
