
31 Dec Charell’s Banana and Blueberry Loaf
Bake in mod oven 150 Celsius for 60 mins
Ingredients:
2 free range eggs
2 dessertspoons Xylitol ( or sugar of choice)
Few drops of vanilla extract
2 medium mashed bananas
2 tlbsp Greek natural yoghurt
¼ cup milk
1 ¼ cup SR Wholemeal flour sifted
1 tlbsp cacao sifted
1 tlbsp chia seeds
½ cup blueberries
½ cup sultanas
Method:
Beat eggs, xylitol and vanilla till light and fluffy
Add sifted ingredients, wet ingredients, chia seeds, blueberries and sultanas
Blend lightly till just incorporated
Bake in a greased loaf tin till skewer comes out dry ( approx 60 mins)
