Coconut Fish

Looking for an easy meal that’s healthy?

Ingredients:
Snapper or blue eyed cod (or Tofu for vegetarians)
2 spring onions
1 small tin light coconut milk
1 stick lemongrass
1 tbsp sweet chilli sause
1/4 lemon

Method:
Place 4 pieces snapper or blue eyed cod into a baking dish. Add 2 chopped spring onions, squeeze juice of 1/4 lemon, add 1 tbsp sweet chilli sauce (more for your liking) 2 tbsp chopped fresh lemongrass, 1 small tin light coconut milk and a dash of salt. Cover with foil and bake for 20-25 mins on 180 degree oven. Enjoy with some streamed Chinese broccoli and beans. Adjust quantities to suit your needs. Vegetarians can substitute fish for tofu and peas and serve with rice for a fresh baked coconut curry. Perfect after yoga or Pilates
