Homemade Hummus With Cucumber Soldiers
Perfect as a snack before or after yoga or Pilates, great for entertaining or a snack for the kids or your work lunch
Ingredients
2 lemons
1 garlic clove
2 tins chick peas
½ tsp paprika
2 tsp olive oil
2 tbsp tahini
1 Lebanese cucumber
Method
Drain the chick peas 80% and add to a food processor. Squeeze the juice of 2 large lemons and add the tahini and garlic with a pinch of salt if desired and 1 ½ tsp olive oil.
Blend until a smooth paste
Serve with a drizzle of the remaining olive oil and a sprinkle of paprika
Serve with sliced cucumber
Serves 6
Cooking time 45 mins so this one would be perfect for cooking on the weekend and freezing or placing into containers for office lunch.
