28 Apr Kale and Vegetable Crustless Dairy Free Quiche
This is a really tasty dish great for a low carb breakfast, lunch or dinner. Nice and light after your Pilates or yoga class or great for a protein kick in the morning for sustained energy for those on a weight loss program.
1 and half cup Bonsoy soy milk
200g carrot grated
75g zucchini grated
250g kale and English spinach
3 small garlic cloves
1 small brown onion
4 eggs whole
3 egg whites
150g soy cheese (or goats cheese if you want a dairy option)
Brown garlic and onions in fry pan while heating oven to 180 degrees. Add rest of vegetables and cool for 2-3 minutes. Place into baking dish. Whisk egg mixture and add soy milk. Add salt and pepper as needed. Mix in with vegetables. Sprinkle cheese over top and bake for 35 minutes.
