
18 Jul Low Carb Cauliflower Fittata Muffins
Bake these yummy savory snacks for breakfast, lunch or a snack. Ridiculously low in carbohydrates and high in protein and vitamins.
Ingredients:
Cauliflower x 1 whole
Eggs x 6-8 (depending on size)
1/2 onion
3 chopped shallots
1 handful English spinach
2 tbsp parmigaiano or parmesan cheese
3 tbsp grated tasty cheese
(can add chopped ham if wish)
Method:
Preheat oven to 190 degrees celsius and lightly spay muffin tins with rice bran oil
In a food processor combine cauliflower, onion, shallots and spinach and blend until chopped.
Place vegetables into a mixing bowl, add cheese, salt and pepper to taste, (chilli flakes if desired) and beaten eggs and mix.
Spoon into muffin tins and bake for 25 mins
Leave to cool slightly before removing from tin
