5 Minute Paleo Bread with Banana and Blueberries 

This gluten free paleo bread is easy to make and great for people sticking to the Paleo diet or wanting to remove grains from every meal. Serve as a snack, dessert or toast for breakfast in a food processor. 

1 cup almond flour 
1 tablespoon coconut oil solid
1 teaspoon baking powder
2 medium bananas
3 whole eggs
2 teaspoons vanilla extract
1/4 teaspoon salt
1-2 teaspoons stevia powder 
1/2 punnet blueberries (optional)

1. Preheat the oven to 190 degrees and line a small baking pan (3 1/2″ by 5″) with baking paper and spray with coconut oil
2. Add ingredients into a cake mixer or use a hand blender and blend to combine. Make sure you keep blending until a smooth mixture has resulted. Stir in blueberries by hand at the very end.
3. Pour mixture into a loaf pan and cook on 190 degrees (180 fan forced ovens) for 50mins until golden brown and a skewer passes through clean.
4. Remove and let cool on wire rack.
