
12 Sep Prawn, Avocado and Mango Lettuce Boats
This meal is fresh and perfect as a single boat for an entree or as an entire lunch or dinner meal.
It’s fresh, cooling but still has protein to keep you full. Perfect after a yoga or Pilates class as you can assemble before and simply serve on lettuce leaves when you return home. Join us for yoga or Pilates at Lane Cove.
Ingredients
1 Mango diced
1 Avocado diced
1/2 Tomato diced
16 Prawns cooked
3 cm Cube fresh ginger
1 Lime
1 Small chilli
1 Tbsp chopped Mint
1 Teaspoon quality olive oil
8 Baby cos lettuce leaves
Method
Peel, remove middle strip and dice prawns into a bowl and add the other diced ingredients. Grate or chop ginger and add. Chop mint and add to ingredients. Chop chilli small and add all or half depending on heat required. Add juice of 1 lime and 1 teaspoon of good quality olive oil and stir through.
Rinse lettuce leaves and spoon mixture into each leaf to create 4-6 (depending on size) of the boats and serve.
Its’s a great dinner to assemble on a hot day when you don’t want to heat the oven or cook over a stove. The kids love them too!
