Salmon Potato Patties
Combine 400gm cooked salmon, 7 boiled potatoes (small- med size), 2 chopped shallots, 1/3 bunch chopped parsley, 1 tbsp mustard, 1/2 cup breadcrumbs, salt and pepper in bowl and once combined create 10-13 patties . Heat fry pan then add a generous amount of oil coating the pan well and cook on medium to high heat until crisp and flip the patties turning down to medium heat until hot. Serve with lemon and wild fresh rocket. Use gluten free breadcrumbs for a #glutenfree meal. A perfect meal in the hotter months and after your Yoga or Pilates class.
