13 Mar Vegetable Frittata
1 bunch kale
4 silver beet branches
1 tub cherry tomatoes
2 squares goats cheese
1- 1.5 cups soy milk / rice milk /milk
Herbs; our choice marjoram and oregano but use what you have
Heat oven to 180 degres. Chop silver beat, kale and tomatoes and add to pan. Grate zucchini and cook veges for around 3-5 mins until half cooked. Beat eggs, milk and a punch of salt together. Chop herbs and add to the egg mixture. Place vegetables into a baking dish and then add the egg mixture over the top. Sprinkle goats cheese over the mixture and place in over to cook for 30 mins. Serve with salad for lunch or dinner and perfect to take to work and reheat.
