
02 Oct Vegetarian Shepherds Pie
A terrific dinner or lunch recipe for those who want to reduce meat in their diet or for vegetarians who want a hearty meal. A great fuel for yoga and Pilates. See you in class at Soulful Fitness Lane Cove.
Ingredients
1/2 onion
1 carrot
1 cup cauliflower
2 cups mushrooms
2 large potatoes
Butter
1/2 cup Soy milk
Grated cheese
1-2 tbsp tomato paste
1.5 tbsp gluten free flour
1 tbsp worcestershire sauce
1 cup water
1/3 cube Vege stock
Method
Heat oven to 190 degrees Celsius.
In a processor chop all veges. Cook in a pan in medium heat for 5 mins stirring. Add flour stir and cook for 2 mins. Add tomato paste and boil water and stir in stock cube and add to vegetables. Add salt and pepper. Cook on low to medium heat for 5 mins. Add to baking dish. Boil potatoes. Once cooked add 1/2 tbsp butter, soy milk and mash. Spoon potatoes on top of vegetables. Spoon over some melted butter or sprinkle with cheese and cook in oven for 10-15 mins.
