
27 Jan Prawn Salad with Vietnamese Inspired Dressing

Ingredients
100g cooked king prawns
10g mint leaves
5g crushed garlic
5g small red chilli
1 tablespoon Rice wine vinegar
1 tablespoon Fish sauce
1 tsp stevia
Juice of 1 lime
50g lettuce mix
30g red capsicum
4 cherry tomatoes
1/2 radish sliced
Method
In a bowl mix together mint leaves, crushed garlic clove, chopped small chilli, fish sauce, rice wine vinegar, sugar and lime juice. Assemble mixed salad leaves and sliced capsicum, tomatoes and radish on a plate. Place cooked prawns on top of salad. Place dipping sauce on the side or tip over salad as a dressing with a zing
